Warming Ayurvedic Soup

We Want to Share Our Favorite Winter Warming Soup..
Curried Cauliflower Soup
– 1 Tbs Ghee
(Or Butter)
– 1/2 Inch Peeled Chopped Ginger -1 Head Cauliflower Cut Into Pieces – 1 Cup Unsweetened Coconut Milk -2 Tsp Curry Powder
– 1 Onion – 1 Garlic Clove – 1/2 Tsp Tumeric  1/2 Tsp Cumin – 1/2 Tsp Salt
 – 4 Cups Chicken Stock – Cilantro as a Garnish – 1/2 Tsp Coriander – 2 Medium Red Potatoes – Yogurt as a Garnish

1. In a large Saucepan – Heat Ghee – Sauté Onion. Add Garlic & Ginger. Stir in Spices. Cook for 5-10 min
2. Add Cauliflower & Potatoes
3. Add Stock and water, bring to a boil then reduce heat simmer partially covered for 30-35 min until veggies are tender. Stir Occasionally.
5. Pour into blender in batches and blend until smooth and cream adding Coconut Milk while blending.
6. Salt to Taste and Serve warm.
7. Top with Yogurt or Nuts and Cilantro
